Balsamic, Tarragon & Roasted Garlic Sauce

Pork Tenderloin
(Serves 2)

1 pork tenderloin about 1 lb
2 medium onions, sliced
1/2 stick margarine

Rub:
1 tablespoon kosher salt
black pepper
1 tablespoon dried thyme
Chef Pascal Balsamic, Tarragon & Roasted Garlic Sauce

In a heavy saucepan, at medium heat add 1/4 stick margarine and brown the pork tenderloin evenly on all sides, about 10 minutes total. If the margarine browns too much, reduce the heat. Remove the pork and put on the side. Put the remainder of the margarine and add sliced onion to a saucepan and caramelize (about 10 minutes). Meanwhile, preheat the oven to 350 degrees. Deglaze saucepan with Chef Pascal Balsamic, Tarragon & Roasted Garlic Sauce. Place the pork tenderloin directly in a roasting pan, add onion and balsamic, tarragon & roasted garlic sauce on top. Roast the pork tenderloin for 20 to 30 minutes. Add some water if the sauce becomes too thick. Add salt and pepper to taste.
